Land-raised Salmon Nigiri Sushi Special Booth | SusHi Tech Tokyo 2024

Kappo Funyu, an authentic Japanese restaurant at Honjo-Azumabashi, Sumida-ku, sells a special set of nigiri sushi, using Atlantic salmon cultivated in an indoor tank with non-native water.
Making the most of the tastiness of sustainable land-raised raw salmon, the restaurant serves nigiri sushi pieces with the scent of raw seaweed simply added. It also serves zuke nigiri sushi with the fish marinated in soy sauce and other special seasonings; aburi sushi with the surface of fish fragrantly roasted; and makimono (rolls) with umami (savory) elements concentrated.
